Easy, moist & light chocolate cake with chocolate buttercream and OPTIONAL raspberries


Serves 8


Step 1
Pre-heat the oven at 175ºC. To a medium bowl add the yoghurt, eggs, sunflower oil, and vanilla extract, and whisk together until combined
Step 2
To a large bowl add the flour, cocoa powder, salt, caster sugar, dark brown sugar, and baking powder, and use a dry whisk to break up any lumps
Step 3
Combine the contents of the two bowls until thoroughly mixed together, then split the mixture between two 7 inch cake tins. Bake in the oven for 20-22 minutes
Step 4
Bake in the oven for 20-22 minutes. While waiting, make the chocolate buttercream. Add the icing sugar and egg whites in a stand mixer bowl, mixing for 2 minutes at medium. Then speed up beater and add the soft butter. Beat for a further 2 minutes, then finally add the melted, but not hot, dark chocolate, beating until fluffy
Step 5
After cooling, sandwich the two cakes together and cover with chocolate buttercream. Decorate the top with raspberries if you like the combination of chocolate and raspberries
