Method

Step 1

Start by activating the yeast by mixing 180ml water with the yeast and sugar

Step 2

Once bubbling, add the flours and salt and mix into a dough, either in a machine or by hand. Once mixed, continue to knead until you have a smooth dough. Place into an oiled bowl, and cover in a warm place for an hour

Step 3

Meanwhile, peel and boil the potatoes until fork tender, then leave to drain

Step 4

Chop the cilantro, green onions and chill into a bowl, grate in the potatoes, and mix in the spices till smooth

Step 5

Get the dough out, divide into 6 equal balls. One at a time, roll each one out into 10 inch pieces, and divide in two

Step 6

Press each piece into a small parcel, then fill with the potato. Press flat slightly and repeat until all the dough is done

Step 7

Heat some oil in a pan, then fry the bolanis on each side till golden, and serve with yoghurt sauce
