Authentic Pad Thai

Serves 2


Step 1

Soak the rice noodles in a bowl of boiling water for 5 minutes until soft. Chop the spring onion, chilli and peanuts

Step 2

In a small bowl, mix the brown sugar, tamarind, fish sauce and oyster sauce really well

Step 3

Slice the chicken and onion and chop the garlic. Then fry the onion and garlic for a minute and add the chicken

Step 4

Once the chicken is cooked, push aside, lightly beat the eggs and pour into the empty side of the pan. Give it a good stir and the eggs will scramble

Step 5

Dice the tofu and add to the pan along with the beansprouts. Drain the noodles and toss through the pan. Cook for a minute, then pour in the sauce and stir well. Add the spring onion and peanuts. Stir well, serve with more peanuts, chilli and lime and enjoy!
