A gorgeous sweet and nutty Middle Eastern treat, you'll think you're tanning in the hot sun with each mouthful! There's room to get creative with the nuts you use as filling, pistachio is very popular but it's totally up to you

Step 1
Melt the butter in a pan with the vegetable oil and remove the white foam. Then make the syrup by heating water with sugar and honey. Bring to the boil and add the lemon juice and optional rosewater
Step 2
Brush the sides of a deep oven dish with the oil mixture and add the first pack of filo pastry 2 layers at a time. After each 2 layers, brush with oil
Step 3
After the first packet of filo is in the dish, add your nuts before repeating adding 2 layers of pastry and brushing
Step 4
Cut the baklawa into squares and brush in oil again before putting into the oven at 180ºC for 30 minutes. Once it’s cooked, add more nuts and pour over the syrup
