Barbecue Shredded Chicken

This easy chicken dish takes less than 30 minutes to make and it's perfect as an easy midweek meal


Serves 3


Step 1
To an instant pot/pressure cooker, add chicken stock, ½ cup/140g BBQ sauce, apple cider vinegar, garlic powder, chilli powder, salt and pepper
Step 2
Mix until well combined, then add the chicken. Cover the chicken with the sauce, then place the lid on top and cook on high pressure for 15 minutes
Step 3
Leave for 10 minutes to release some steam, then unseal and check that the chicken’s fully cooked through
Step 4
Remove the chicken and add ¾ cup/210g BBQ sauce to the pot and mix well. Shred the chicken, then return to the pot and mix well. Serve and enjoy!
