Beef and Caramelised Onion Toastie Bites

Method

Step 1

Empty the brisket joint and juiced into the try provided, cover with tin foil and cook for 30 minutes at 180ºC

Step 2

Whilst that’s cooking, heat olive oil in a frying pan and add finely sliced onion. Fry for 5 minutes before adding sugar, salt and dark beer or stout

Step 3

Stir and cook on a medium heat for around 15 minutes, stirring occasionally

Step 4

Take the brisket out of the oven and carefully remove the tin foil. Drain most of the juices and save for stock, keep some meat in and shred with 2 forks

Step 5

Grate the gouda on a plate and set aside before slicing the sourdough into 8 slices about 3cm thick

Step 6

Place the slices onto a baking tray and toast under a medium grill for a few minutes before flipping to toast the other side

Step 7

Spread Dijon mustard on the toasted bread followed by shredded beef and grated cheese and place back under the grill until the cheese has melted

Step 8

Spoon on some of the caramelised onions, serve and enjoy!
