Start by dicing your onions and finely chopping your mushrooms. Mince your garlic and set it all aside for later. Then, place a hob on the heat and melt your butter. Once melted add in your stewing steak and brown. Once browned, remove from the pan along with the juices
Next, add in some oil and then your onions, followed by your garlic a few minutes later. Sautee for a few minutes together, before adding in your mushrooms and letting them sotfen
Now, add in your paprika and dijon mustard and stir well to combine everything together
For the sauce, mix one cup of beef stock with worcesteshire sauce and flour. Whisk until smooth and then pour over the pan. Add your steak and juices back at this point too. Let simmer for a few minutes and once it begins to thicken, add in your sour cream. Allow to melt and combine with the rest of the stroganoff before serving with your choice of carbs for the ultimate winter warmer!
