This levelled up beans on toast with lemony, crispy mushrooms is a must for your Sunday brunch to have a glow up
Ingredients
Serves 1
1 tin baked beans
5 mushrooms
2 slices bread
½tbsp sage
½ lemon (juice)
1tbsp nutritional yeast
1tbsp hemp/chia seeds
½tbsp mixed herbs
1tbsp vegan butter
Salt
Pepper
Method
Step 1
Dice the mushrooms, then melt the butter in a pan and add the mushrooms along with sage and lemon juice
Step 2
Season with salt and pepper, cover and leave to cook for 5 minutes
Step 3
Heat the beans in a saucepan and add hemp or chia seeds, nutritional yeast and mixed herbs. Allow to simmer whilst the mushrooms go nice and golden
Step 4
Toast the bread and top with the baked beans and the lemony mushrooms, serve and enjoy!
