Ingredients

Method

Step 1

To prep, thinly slice the onion, dice the pepper and beat the eggs and egg whites together in a bowl

Step 2

Get a pan on a medium heat with a few sprays of oil and add the onion and turkey bacon

Step 3

After 3 minutes, flip the bacon

Step 4

Remove the turkey and set aside on a plate before adding bell pepper and season with 1 pinch salt, ½ tsp smoked paprika, ½ tsp dried parsley and 1 pinch red chilli flakes

Step 5

Mix and then push the seasoned onion and pepper to the side

Step 6

Add the beaten egg mixture to the pan, stir until scrambled and then mix everything together

Step 7

Slice the bacon and re-add to the pan along with the rice

Step 8

Season again with 1 pinch salt, ½ tsp smoked paprika, ½ tsp dried parsley and 1 pinch red chilli flakes

Step 9

Give it a final mix and serve with spring onion as a garnish
