To prep, thinly slice the onion, dice the pepper and beat the eggs and egg whites together in a bowl

Get a pan on a medium heat with a few sprays of oil and add the onion and turkey bacon

After 3 minutes, flip the bacon

Remove the turkey and set aside on a plate before adding bell pepper and season with 1 pinch salt, Β½ tsp smoked paprika, Β½ tsp dried parsley and 1 pinch red chilli flakes

Mix and then push the seasoned onion and pepper to the side

Add the beaten egg mixture to the pan, stir until scrambled and then mix everything together

Slice the bacon and re-add to the pan along with the rice

Season again with 1 pinch salt, Β½ tsp smoked paprika, Β½ tsp dried parsley and 1 pinch red chilli flakes

Give it a final mix and serve with spring onion as a garnish
