Easy breakfast sandwich for when you are on the go!

Step 1
Start by lightly toasting your bread, then layer one side with a handful of lettuce. Slice a tomato and add that over the lettuce. Season with salt and pepper. Cook your bacon, add the rashes of bacon to a frying pan over medium heat (no added oil needed) and fry for 3-4 minutes on either side until cooked
Step 2
Crack three eggs into a mixing bowl, whisk together, then add to a pan over low-medium heat with a tablespoon of butter. Continuously stir the eggs and when they begin to form lumps season with pepper, salt and some fresh parsley, continue cooking until they reach a desired consistency. Add the bacon to the sandwich, followed by grated cheddar
Step 3
Finally top the sandwich off with the scrambled egg, close with the other toast and youโre ready to go!
