Broccoli Pasta

Pasta with a cream of broccoli made from simply broccoli, garlic and olive oil (no blender needed)


Serves 2


Step 1
Cut one head of broccoli like shown and boil in salted water for 10 minutes (you can use the stem if you'd like, avoiding the bottom 2-3 cm)
Step 2
Heat a pan with 2-3tbsp of olive oil and 1 thinly sliced garlic clove
Step 3
When the 10 minutes are up, transfer the broccoli to the pan and add 2-3tbsp of the cooking water. Cook for another 10 minutes, until the broccoli starts breaking down
Step 4
In the same water cook your favourite type of pasta al dente. Transfer the pasta in the pan with the broccoli and half a glass full of cooking water and turn off the heat. Mix for a minute or two until creamy and ready
Step 5
Adjust with salt and pepper and serve with chili oil (if you like) and parmesan
