Stir the remaining sauce through some noodles for a brilliant dinner that will leave friends coming to you for food time after timeβ
In a large bowl, mix soy sauce, gochugaru, rice syrup, gochujang and chicken stock to make the marinade

Remove the bones from the chicken and add to the bowl of marinade. Leave for at least 45 minutes, preferably overnight

Finely mince the garlic, peel and grate the ginger, and chop the chilli. Fry the garlic and ginger and, once fragrant, add the chilli and pepper

Stir, add the marinade (without the chicken) and the Sprite. Simmer and reduce

Place the chicken on a wire tray oven a baking tray and grill on a high heat for 5 minutes on each side
Step 6
Place the chicken in a cast iron, spread over some of the gochujang sauce, top with mozzarella and grill until the cheese melts. Top with chopped spring onion and sesame seeds, serve and enjoy!
