Method

Step 1
Mix the flour, baking powder, bicarb, salt and ground ginger in a bowl
Step 2
Beat together the eggs, oil and sugar till completely combined, then the flour mixture, then the grated carrot
Step 3
Finally chop and fold in the crystallised ginger and walnuts
Step 4
Line a tin with baking parchment and butter, then spoon in the mixture and bake at 150° for around 45 minutes
Step 5
Meanwhile make the icing but mixing together the icing sugar and butter, then folding in the cornflour and then gradually, the cream cheese.
Step 6
Grate the ginger and squeeze out the juice, mix this into the icing, then once the cake is completely cooled pipe onto the cake. Slice up and enjoy!
