Method

Step 1

In the bowl put semolina, flour, salt and 350ml warm water. Mix with a spoon or hand first until the dough gets together. The dough is hard at this point. Gradually add water until the dough is smooth. Form dough balls, place on a plate, drizzle with olive oil and cover with cling film

Step 2

In a saucepan over medium heat add olive oil and the beef pieces. Add onion, garlic, salt, pepper, Ras al Hanout, paprika, tomato paste and let cook for 5 minutes.

Step 3

Add grated tomato and chickpeas and let cook for 10 to 15 minutes

Step 4

Add a jalapeño (optional) and boiled water to slightly cover the meat. Let cook for about 45 minutes or until the meat and chickpeas are cooked

Step 5

Oil your working board (with olive oil) and take 1 ball of dough at the time. Flatten the ball of dough with your hand and make sure to work on the edges

Step 6

Cook the bread on a hot skillet. Boil the eggs. Serve the beef stew on top of the bread. Garnish with parsley and eggs
