Step 1

In a bowl combine the Greek yoghurt, grated cheddar cheese, diced chives, smoked paprika and pepper.

Step 2

Spread the mixture on one of the slices and place the other slice on top. Squirt a bit of light mayonnaise on the top and spread in.

Step 3

Place the toastie 'mayonnaise-side-down' in a medium heat frying pan, squirt the other half of the mayonnaise on top and cook for 3-4 minutes.

Step 4

Turn, cook the other side and then serve!
