Cheese n Onion Smashed Potatoes

Serves 6


Step 1

Fill a pan with water and put onto the heat with a generous amount of salt, then boil the potatoes. Preheat your oven to 200ºC

Step 2

Finely chop the garlic, then add to a bowl with oregano and chilli. Melt the olive oil and butter together in a saucepan

Step 3

Pour the butter and olive oil into the bowl with the garlic, chilli and oregano and mix

Step 4

Once the potatoes are soft, drain. With the pot on a pan stand, readd the potatoes, then pour over half of the oil mixture

Step 5

Toss well, then transfer the potatoes to a lined baking tray. Press down on the potatoes with the bottom of a ramekin to “smash” them

Step 6

Brush the potatoes with the excess oil, then bake in the oven for around 20 minutes

Step 7

Finely slice the onion. Flip the potatoes and return to the oven for a further 10 minutes

Step 8

Top the potatoes with cheese and onion, bake for a further 2 minutes, serve and enjoy!
