Cheesy Broccoli Pasta

Serves 4


Step 1

Bring salted water to boil and add the pasta, simmer for around 8 mins. In the meantime, slice the onion and chop the broccoli into small florets and the stem into small pieces. Heat the olive oil in a large pan and add the broccoli and onion. Stir and fry for around 5 mins and then spoon in the cream cheese.

Step 2

Ladle in some of the reserved pasta water and give it a stir to make a sauce. Add salt, pepper, garlic granules, smoked paprika and piri piri seasoning, stir again and then simmer on medium for a further 5 mins to thicken the sauce

Step 3

Add in the drained pasta and stir once more to combine all of the ingredients before serving into four equal portions and garnishing with fresh parsley. Enjoy!
