Preheat your oven to 180 degrees celsius. Cut your potatoes into rough chunks and add them to a casserole dish along with your chicken thighs
Roughly chop your peppers, onion and tomatoes and add those to the casserole dish.
Add the chilli flakes, dried mint, oregano, and some salt and pepper to the dish, then drizzle with some sunflower oil. Use your hands to give everything in the dish a good toss and enxure it is all coated with the oil and seasonings
In a mug or bowl add the boiling water to the tomato puree and mix together. Pour it over your chicken and veg and then cover your dish with some foil and place it into your oven for approx 1 hour 45 minutes
Remove the foil from your dish and return it to the oven for a further 30 minutes to allow your chicken to crisp up
