This tasty salad is the quick lunch that you've been dreaming of. It can be prepped beforehand and eaten cold to be the envy of the office or you can whip it up at home for a healthy and delicious meal
Butterfly the chicken breasts by slicing almost completely in half but being sure to leave some meat on one side so that they stay whole
Sprinkle over taco seasoning and rub into the meat
Heat 1tbsp olive oil in a pan and fry the chicken. In the meantime, melt butter in a separate pan and add in the peas, stirring frequently
Flip the chicken and blend the avocado with yoghurt, lime juice, salt, pepper and 1tbsp olive oil until smooth
Remove the chicken from the pan and set aside. Slice the tortillas into strips and fry in the same pan that you cooked the chicken in until crispy with salt and pepper
Slice the chicken, spring onion, green chilli and cucumber and serve the rocket topped with peas, cucumber, green chilli, spring onion, avocado dressing, crispy tortillas and the chicken. Season and enjoy!
