Step 1

Start prepping your vegetables by dicing the onion and peppers and slicing the green beans. Add to a baking tray along with the tomatoes and drizzle with olive oil and season with 1tsp salt, 1tsp pepper, cumin, 1tsp smoked paprika and 1tsp Italian mixed herbs. Spoon over garlic and chilli paste, mix and place in the oven at 180ยบC for 30 minutes. Wash and cook your rice

Step 2

Dice the chicken breast and fry in some more olive oil and season with salt, pepper, Italian mixed herbs and smoked paprika. Take out the tray and add the cooked chicken along with the rice. Stir it all in and serve into 4 equal portions
