If you're out of money and out of time, this chickpea curry is perfect for you.
Ingredients
Serves 1
1/2 tin chickpeas
1tbsp tomato puree
60ml coconut milk
1/2 white onion
1 clove garlic
1 pinch chilli flakes
1 pinch curry powder
1 pinch salt
1tbsp oil
Method
Step 1
Dice the onion and mince the garlic
Step 2
Fry the diced onion in oil and, when slightly translucent, add the garlic, chilli flakes and curry powder. Fry off for a few minutes
Step 3
Add the salt and chickpeas and stir
Step 4
Add the tomato puree and stir until you’ve fully coated the chickpeas
Step 5
Add the coconut milk, stir, serve with rice and enjoy!
