Method

Step 1

For wet batter, combine the flour, curry powder, baking powder, garlic powder, mustard powder, salt, and pepper. Slowly pour in the beer until the mixture is thick, then leave to chill in the fridge (or freezer, just don't let freeze)

Step 2

Peel and chop potatoes into 1inch cubes. Place in a pot of cold, salted water, bringing to the boil and simmering until tender. Drain and place back into the same pot without the heat, cover and leave for 10 minutes

Step 3

Pass potatoes through a potato ricer into a clean bowl. Add seasoning of your choice and form into a fish shape

Step 4

Cover the potato in flour, brush with egg wash and then coat in breadcrumbs. Deep fry in vegetable oil at 180°C until golden brown, then remove and rest on drying rack

Step 5

Create a dry batter using flour, curry powder, baking powder, garlic powder, mustard powder, salt, and pepper. Slice cod into chip shapes then coat in this batter

Step 6

Dip fish into the wet batter, then deep fry for about 2 minutes until golden brown. Remove from oil and rest on drying rack

Step 7

Serve with tartare sauce created from combining shallots, gherkins, capers, mayo, lime juice, parsley, salt and pepper in a small bowl
