Enjoy this healthy stir fry as part of your midweek meals

Method
Step 1
Dice your chicken thighs and then place into a mixing bowl. Marinate with salt, pepper, lime juice, coconut yoghurt, chilli powder, smoked paprika, ginger and garlic paste. Mix well and leave in the fridge for ten minutes
Step 2
Whilst marinating, chop up your bell pepper and red onion
Step 3
Fry your chicken thighs and once cooked, remove and replace with the peppers and onions. Season with more ginger and garlic paste, then a dash of soy sauce. Add the chicken back to the pan along with a spoonful of coconut yoghurt. Mix well
Step 4
Cook your noodles according to packet instructions, and once cooked add a dash of noodle water to the pan along with the noodles. Combine and serve
