Description

Pan cakes made of cod and potatoes, cooked in a pan and served in a bun with sriracha lime mayo and rucola salad.

Method

Step 1
Peel and boil potatoes in salted water for 15 minutes. Chop the cod fillets as finely as possible, chop the parsley and add them together in a bowl. Season the fish with salt, pepper, paprika and chilli flakes. Mash the potatoes in the same bowl with a potato press (or a garlic press) and mix it all together properly
Step 2
Form patties from the mixture about 3cm in diameter and in a pan with a couple tbsp of olive oil on medium heat cook them for 5 minutes on each side (be careful not to cook on high heat or it will burn outside and not cook through)
Step 3
Make the sauce by mixing lime juice, 1tbsp of mayo and 1tbsp of sriracha. Assemble the bun with sauce, rocket salad and two cakes
