Start by chopping your carrots, onions and mince your garlic

Then, fry your pancetta. Once golden, add your chicken thighs to sear both sides. Then, remove everything from the pan

Fry your carrots and onions, then add in your garlic. Sauté for five to ten minutes

Return the chicken thighs and pancetta back to the pan, then follow with chicken stock, red wine, butter and flour. Stir well. Cover and leave so the chicken can finish cooking and the sauce can thicken. Stir occasionally. Serve and enjoy!
