Step 1

Start by dicing your red onion, avocado, jalapeno, pepper and tomatoes into small chunks. Then, drain your cans of beans and chop up your coriander

Step 2

Next make your dressing by preparing a mason jar with a lid, and adding in olive oil, the juice of one lemon, apple cider vinegar, agave, garlic powder and salt and pepper. Shake well with the lid on and set aside

Step 3

In a large salad bowl, pour in your red beans and follow with white. Then add your onion, avocado, pepper, jalapeno, corn and tomatoes. Add your coriander in too and give it a good mix. Pour over your dressing and give your cowboy caviar another mix. Serve with tortilla chips
