Method

Step 1

Chop up the aubergine into small chunks, then place in a bowl with the salt, pepper and paprika; set aside

Step 2

Heat up the light butter in a pan, then fry off the aubergine. Get some water boiling for your pasta

Step 3

Chop up the onion, garlic and tomatoes, then remove the aubergine and add to the pan. Get the pasta cooking

Step 4

Add the passata, then bring up to heat and blend. Return the aubergines, along with the creme fraiche, then stir through your pasta with some pasta water, and enjoy!
