Start by finely dicing the shallot, garlic and chilli and then slice the broccoli and mushrooms

Salt and boil some water before adding the broccoli to blanche for 3-5 minutes and then put it in an ice bath. Bring the water up to a rolling boil and then add the broccoli
Step 3
Heat extra virgin olive oil in a pan and fry off the shallots and for a minute before adding butter and mushrooms. After another minute, add the garlic and chilli and mix. Add the broccoli and cook until it has a nice colour
Step 4
Add double cream, Cajun seasoning, a splash of pasta water and the simmer down to thicken. Add the pasta when it’s al dente, turn off the heat and then grate in parmesan before mixing in and you’re ready to serve
