Creamy Chicken and Tomato Pasta

Serves 2


Step 1

In a pan, add oil from the sun dried tomato jar, and get your chicken frying on a medium heat. Then, season with salt, pepper, italian mixed herbs, smoked paprika and chilli flakes. Fry for six to eight minutes and then set aside for later.

Step 2

In the same pan, add some more oil from the jar of tomatoes. Add in shallots and garlic and begin to fry. Season with italian herbs and cook for two minutes.

Step 3

Next, pour in chicken stock to the garlic and shallots and add in your pasta and begin to cook. Let this simmer for eight minutes until the liquid has reduced and the pasta is al dente.

Step 4

Now spoon in your mustard and crème fraiche and then stir through. Add the spinach on top and gently stir until wilted.

Step 5

Finally add in the chopped sundried tomatoes, chicken and parmesan. Stir and combine, serve and enjoy!
