Method
Step 1
Finely dice the onion, pepper and garlic and chop the chilli and set aside. Get the pasta on to boil. Slice the chicken breast into thin strips and add to a pan with oil
Step 2
Add the fajita spice mix and stir well
Step 3
Once the chicken is cooked through, remove from the pan and add the onion, garlic, chilli, peppers and white wine. Stir well
Step 4
Add the tomato puree, salt and cream, stir and cook until thickened
Step 5
Add the cooked pasta and stir well before readding the cooked chicken and Pepper Jack cheese
