Method

Step 1

Boil 5 eggs for 8 minutes and peel off the shells

Step 2

Remove the yolks from the eggs and set 2 aside

Step 3

Combine the remaining 3 egg yolks with the cream cheese, mustard, salt & pepper and then mash

Step 4

Chop up the egg whites and mix in with the paste

Step 5

Spread the mixture evenly on the 2 slices of bread with chopped chives and a squeeze of sriracha and top with the other slices of bread
