Creamy Hidden Veg Pasta

Serves 4


Step 1

Roughly chop the onion, mushrooms, peppers and tomatoes and place in a roasting tin. Drizzle over olive oil, then season with ½tsp salt, ½tsp pepper, smoked paprika, garlic granules and Italian mixed herbs. Preheat your oven to 200ºC/425ºF

Step 2

Mix well, then make a space in the middle for the block of Boursin and roast for 40 minutes

Step 3

Add 2tsp salt to boiling water, then cook the pasta for about 8 minutes and drain. Be sure to reserve some of the pasta water

Step 4

Once the vegetables are cooked, allow to cool slightly then blend until smooth with some of the reserved pasta water

Step 5

Add the pasta back into the pan, then stir through the sauce. Heat for a few minutes, serve and enjoy!
