Preheat your oven to fan 200ºC. Slice the potatoes in half and place in a bowl. Spray with the cooking spray, then sprinkle over salt, pepper, ½tsp garlic granules and ½tsp Italian mixed herbs

Mix well, then place on a baking tray and cook for 35 minutes

Heat the olive oil in a frying pan, then place in the pork medallions. Season both sides with salt and pepper and cook for around 2 minutes on each side, then set aside on a plate

Thinly slice the onion and mushrooms and add to the same pan that you cooked the pork in. Fry for around 5 minutes, then add broccoli, chicken stock and crème fraîche

Mix well, then season with ½tsp garlic granules, ½tsp Italian mixed herbs and Cajun seasoning. Chop the parsley and stir through the sauce

Leave to simmer for around 5 minutes, then readd the pork and pork juices and simmer for a further 5 minutes. Serve the potatoes followed by the sauce, top with pork and enjoy!
