Method

Step 1
On a medium heat, melt the butter and add the flour. Stir until the raw flour small has gone and slowly add the milk
Step 2
Continue slowly adding the milk until you have a smooth sauce, then add the nutmeg, season with salt and pepper and give it one final mix. Set aside
Step 3
Toast your bread and grate your cheese. Spread over some butter, then bechamel, then add some grated gruyere. Layer with ham, more cheese, then top with the second slice of pread, spread liberally with mustard.
Step 4
Top with the remaining bechamel, some more grated gruyere, then place under the grill until golden brown and crispy
