This chicken BLT wrap, with homemade cottage cheese sauce is delicious!
Firstly, slice your chicken breast in half
In a small bowl, add your flour, corn flour, smoked paprika, Cajun seasoning, a pinch of salt, garlic powder, and the dried thyme. Mix to combine and set aside
Crack your eggs into another dish and whisk, then place your cornflake crumbs and grated parmesan together into another bowl, mixing to make sure the cornflakes and parmesan are combined
Dip your chicken breast into the flour mix first, then the egg, then dip it back into the flour and the egg for a second time. It is then ready to coat in your cornflake/parmesan mix. Once coated refrigerate for 20 minutes and then place into your air fryer for 10-12 minutes at 200 degrees celsius
While the chicken is cooking, prepare the sauce. Into a small bowl, add the cottage cheese, mayonnaise and sweet chilli sauce and mix to combine
Start to prepare your wrap. First add some of your sauce before then layering as much lettuce, onion and tomato as you wish and then sprinkle a pinch of salt. By now your chicken will be ready. Cut into slices and place into your wrap and top with more of your cottage cheese sauce and the bacon
Wrap it all up, then add it to a pan on a medium - high heat to toast the outside of the wrap. Slice in half and enjoy!
