Cut the cucumber in half and remove seeds with either a small spoon or knife to create a long, hollow tube

Slice the bell peppers, carrot and a bit of tofu. Insert inside the cucumber until packed full (so it doesn’t fall apart). Slice the cucumber into pieces

Prepare the sauce by mixing tahini, soy sauce, rice vinegar and sriracha sauce. Drizzle on top of the cucumber sushi and enjoy!
