Description

Clear some space in your fridge whilst eating good with this amazing fried rice and duck breast

Ingredients

Method

Step 1
Lightly score the skin on the duck breast, trying not to hit the meat
Step 2
Season generously with smoked sea salt and Chinese 5 spice
Step 3
Chop the carrots, baby corn and green onions (or any other veg that you have lying around) and mince the garlic
Step 4
Beat the eggs in a bowl
Step 5
Place the duck in a cold pan on the hob skin side down for about 6 minutes
Step 6
Add butter to the pan and flip for another minute, making sure to baste it with the butter
Step 7
Put the duck straight in the oven at 200ºC for 6-8 minutes for medium-rare, 8-10 for medium, or 15 minutes for well-done (remember to save the oil, you can use it for amazing potatoes)
Step 8
Heat the oil in a pan or wok, add the eggs, scramble and cook about ¾ of the way before setting aside
Step 9
Add some more oil to the pan along with the chopped vegetables
Step 10
Let the vegetables cook before adding peas, garlic, cooked rice, oyster sauce, soy sauce, white pepper and ginger powder
Step 11
Re-add the eggs and turn the heat off
Step 12
Let the duck rest for 10 minutes, slice and serve on top of the fancily plated rice
