Using puff pastry, the only thing you have to concentrate is the custard filling, these Portuguese tarts are a must try!

Step 1
Start by making a simple syrup. To do this, combine water and sugar and bring to a simmer. Add in a cinnamon stick as well as the zest of half a lemon for some extra flavour
Step 2
In a separate pot, pour in flour, milk, salt and vanilla. Mix on a medium heat as it begins to thicken turn the heat off. Separate six yolks from the whites of an egg and add to the mixture. Whisk well together off the heat
Step 3
Pour in the simple syrup, along with the aromatics (these will be strained away later). Mix together and then strain away the cinnamon and lemon peel.
Step 4
Slice your puff pastry into 1-2 inch thick slices and shape around muffin or cupcake tins. Then, once moulded, pour in the custard until just below the top.
Step 5
Bake at 250C for ten to twelve minutes. Let cool and enjoy
