Easy Peasy Wheezy Lemon Cake

Serves 8


Step 1

Preheat the oven to 175. Zest your lemon into a bowl, then add the egg, sunflower oil and yoghurt; stir to combine

Step 2

Add the dry ingredients then stir really well until smooth

Step 3

Scrape into a lined 7 inch cake tin for around 20 minutes, or until a skewer comes out clean

Step 4

Once the cake has cooled slightly, make the topping; mix the remaining sugar with the juice of the lemon, then prod your cake all over and scoop over the sugar liquid

Step 5

Leave to cool completely and crystallised on top, then cut into squares and enjoy!
