Description

Simple 15 minute lunch, the easiest thing to whip up, plus you can substitute the vegetables with whatever you have in your cupboard

Method

Step 1
Chop the onion, garlic, pepper and mushrooms. Boil the noodles
Step 2
Heat oil in a frying pan and add the onion and garlic. Fry for a few minutes until the onion is nearly translucent
Step 3
Add the pepper, sugar snaps and mushrooms. Stir and cover with a lid until the vegetables are soft
Step 4
Move the vegetables to the side and crack the eggs in. Scramble, season with salt and then combine with the veg
Step 5
Add the cooked noodles, soy sauce, rice vinegar and fish sauce, stir, serve and enjoy!
