Step 1
Chop up the potatoes, sweet pepper, red onion, cherry tomatoes and mushrooms. Combine black pepper, salt, smoke paprika, oregano and chipotle chilli flakes in a bowl. Whisk the eggs together
Step 2
Spray some oil into a frying pan. Add the onion, potatoes, pepper and mushrooms. Cook for 2 minutes then add the tomatoes. Season with half of the spice mix. Add the eggs and the rest of the spice mix. Sprinkle with cheddar cheese. Heat until egg cooked through and cheese melted. Garnish with chives
