“This healthy, simple, and amazingly creamy chicken pasta is quick and easy to make and so delicious, a midweek meal that you'll want to make over and over again”
Start by roughly chopping the bell peppers and red onion, slicing the cherry tomatoes in half and dicing the garlic
Step 2
Heat a large pan over medium high heat and spray with some Frylight before adding in the chopped pepper, onion and tomatoes
Step 3
Stir and fry for around 5 mins before adding in the diced garlic. Then sprinkle in 1/2 tsp of salt, pepper and Italian mixed herbs and stir and fry for a further 2 minutes
Step 4
Once all of the veg has softened, carefully ladle into a blender cup or food processor, followed by the small handful of fresh basil
Step 5
Blitz that for a few minutes until you have a nice smooth sauce ready for later
Step 6
Bring some salted water to boil and add your pasta, simmering for 8 minutes. Once cooked, drain and reserve half a cup of pasta water
Step 7
In the meantime, slice the chicken breast into small chunks. Then heat Frylight in the same pan add the chicken. Season with ½tsp of salt, pepper, garlic granules and Italian mixed herbs. Continue to stir and fry for a further 6 mins
Step 8
Pour in the blended sauce, spoon in the cream cheese and ladle in some of the pasta water. Stir all together to make a nice sauce consistency and then simmer for a few mins
Step 9
Add in the drained pasta and give it a final stir through to fully combine before serving into four equal portions. Enjoy!
