Garlic Shrimp and Bang Bang Chicken Pineapple

Ingredients (20)

Serves 2

2 cups of rice

2 cups of water

⅔ cup of milk

⅓ cup of flour

½ cup of cornstarch

1 egg

2 tbsp lemon juice

2 tbsp sriracha

Salt and pepper

1 ½ cup of panko breadcrumbs

1 egg

2 chicken breasts

½ cup mayonnaise

2 tbsp honey

2 tbsp sweet chilli sauce

1 pineapple

1 tbsp avocado

3 cloves of garlic (diced)

1 tbsp garlic powder

1 tbsp old bay

Method

Step 1

Wash the rice and cook it in the rice cooker with 2 cups of water.


Step 2

In a bowl, add the milk, flour, cornstarch, lemon juice, 1 tbsp sriracha, salt and pepper. Mix well and add the egg.


Step 3

Chop the chicken into chunks.


Step 4

Spray the air fryer with oil.


Step 5

Dip the chicken pieces into the batter bowl first and then coat in the panko.


Step 6

Next place into the airfryer at 380F for 10 minutes.


Step 7

In a separate bowl mix mayonnaise, honey, 1 tbsp sriracha and sweet chilli sauce.


Step 8

Chop the pineapple in half and cut out the middle.


Step 9

Place the shrimp into a bowl and season with salt,pepper, garlic powder and old bay. Mix well.


Step 10

Add avocado oil to a frying pan on medium heat, then add diced garlic, before adding the shrimp. Fry for 4 minutes on each side.


Step 11

Remove the chicken from the air fryer, add the sauce prepared earlier and mix well.


Step 12

Flip the prawns and add a splash of lemon juice.


Step 13

Add the rice, followed by chicken and prawns on to your hollowed out pineapple and serve.
