Crack 3 eggs into a pan with your butter and stir together on a medium heat

Take it off and on the heat a few times whilst the eggs scramble. When it is almost done (very slightly runny in some places), take off the heat. Add some créme fraiche, season with salt and pepper and mix together

Serve on a piece of toast with some rocket and drizzle on your Sheff Preserves chilli jam
