Green Bean Casserole

Ingredients (13)

Serves 5

2lb/900g green beans

1/2 large sweet onion

2 cloves garlic

3 portobello mushrooms

2tbsp flour

250ml chicken stock

250ml half and half (125ml milk, 125ml cream)

2tbsp panko

1 handful crispy fried onions

2-3tbsp butter

Olive oil

Salt (to taste)

Pepper (to taste)


Step 1

Wash the green beans and snap off the ends. Dice the onion and mushrooms and finely chop the garlic, set aside

Step 2

Bring a pot of water to boil with salt and boil the green beans for 5 minutes

Step 3

Melt the butter in a pan with olive oil and fry off the onion until translucent

Step 4

Season with salt and pepper before adding the garlic and mushrooms

Step 5

Drain the green beans before putting in an ice bath to stop them from cooking further

Step 6

Sprinkle the flour into the pan and mix well before adding stock and half and half, stir continuously until thickened

Step 7

Grease a baking dish and add the beans and sauce. Top with panko and crispy onions before baking at 375ºF/190ºC until browned on the top, serve and enjoy!
