Grilled Eggplant Pasta

Step 1
Dice up your onions, then get them frying with the chilli flakes
Step 2
Once softened, throw in the passata, stir through and place a lid on. Leave to cook over a medium heat

Slice your eggplant vertically into thick slices, and lay them on a baking tray
Step 4
In a jar, mix the garlic, oil, oregano, onion granules and salt; brush liberally over your aubergines
Step 5
Turn your grill on and get your eggplant on; brush liberally on the other side
Step 6
Cook the pasta in salty water while the eggplant cooks, then drain and stir through the pasta sauce
Step 7
Serve the pasta alongside the golden eggplant and a little salad
