Method

Step 1

Cut the potatoes in half, then place in a sauce pan with the mint leaves and plenty of salt. Cover with boiling water, then allow to cook on a medium heat for 20 minutes

Step 2

Meanwhile peel and finely slice the ginger

Step 3

Once soft, drain the potatoes, and leave to cool

Step 4

Finely slice the spring onions, then pour the juice of the lime, oil, honey and gochujang into a bowl and mix

Step 5

Add the potatoes to the dressing along with the ginger, and toss to coat. Serve when you're ready to eat!
