Healthier Baked Popcorn Chicken

Serves 1


Step 1

Preheat the oven to fan 220ยฐ Celsius / 475ยฐ Fahrenheit and slice the chicken breast into small chunks (approx. 2cm by 2cm)

Step 2

Place into a large bowl with 1/2 tsp of garlic granules, onion granules, salt, pepper and 1 tsp of Italian mixed herbs and smoked paprika

Step 3

Mix all of that together and then crack the egg in with the chicken and mix again so the chicken is coated with the egg

Step 4

In a separate bowl, pour in the Panko breadcrumbs with the same seasonings as the chicken and mix

Step 5

Taking a few chicken pieces at a time with one hand, drop into the breadcrumbs, then with your other hand scoop over the breadcrumbs and fully coat the chicken pieces (Itโ€™s easier if you keep one hand for wet and one hand for dry)

Step 6

Either use a non-stick baking tray or line a baking tray with baking paper and lay down the chicken pieces. Place in the oven for 12 mins until golden and cooked through
