Healthier Sweet and Sour Chicken

This delicious, classic chicken dish feels so much nicer than getting a takeaway, and it only takes about half an hour to make


Serves 2


Step 1
Chop the chicken, peppers and onion into chunks and mince the garlic
Step 2
In a bowl, mix the cornflour, eggs, paprika, salt, pepper and flour to make a batter, then coat the chicken in the batter
Step 3
Heat a pan with the sesame oil and fry the chicken until the coating crisps up, then bake in the oven until cooked through
Step 4
Fry off the pepper and onion in the same pan. Whilst those are cooking, mix soy sauce, ketchup, garlic, red wine vinegar and sweetener in a bowl
Step 5
Add a splash of water, then add the sauce mix to the vegetables and let it bubble. Add water to taste, then readd the chicken and coat well, then serve and enjoy!
