A fusion of Indian and Asian flavours and cuisine, all made healthy.
Start by dicing your onion, chilli, garlic and ginger. Dice your lamb and potatoes.
Spray oil into your pan on a medium heat. Fry your onions, garlic, ginger and chilli together with some mustard seeds. Add in your lamb
Season with cumin, cardamom and chilli powder. Add in your diced potatoes and water. Stir together and add in your coconut yoghurt. Thicken and reduce the water to a sauce.
Prepare the spring rolls by removing the mixture from the pan and adding two tbsp of mixture to the centre of the spring roll paper. Add in some grated cheese and roll together, sealing the roll with a bit of water
Create and egg wash by whisking egg whites. Cover each roll in the wash and then cover in breadcrumbs. Fry in the air fryer for ten minutes at 200C. Enjoy
